Think about a moist and fluffy muffin with the taste of a spicy gingerbread. Then add sweet, canned pears and your favourite chocolate to it! I used white chocolate, but you can use dark or milk chocolate too. Think about white chocolate chunks from Lindt or why not Toblerone? You will get the most delicious gingerbread muffins with pear and chocolate!

I would recommend you to chop the pear and especially chocolate in small pieces. Otherwise everything will sink down to the bottom of the muffins. Let me know if you try this Christmas muffins recipe! And try with soft and sweet fresh pears if you don’t have the canned ones.

I have tried the same recipe with butter instead of oil too, but oil gives you much more moist muffins, and they keep moist and fresh for a longer time. Most of the time I buy mixed gingerbread spice, but if you dont have that at home, you can mix 1 tsp cinnamon, 1 tsp ginger, 0.75 tsp clove and 0.75 tsp cardamom.

Recipe for the best gingerbread muffins with pear and white chocolate chunks

INGREDIENTS:
  • 2 eggs
  • 1 dl sugar
  • 1 dl light brown sugar (ljus muscovado)
  • 3.25 dl flour
  • 1.5 tbsp gingerbread spice
  • 1 tsp baking powder
  • 0.5 tsp bicarbonate
  • 0.5 tsp salt
  • 1 pinch of vanilla powder
  • 1 dl oil (I use canola)
  • 1 dl milk
  • 0.5 tbsp white vine vinegar
  • 50 g chocolate (I used white)
  • 100 g pear, canned (or fresh if you prefer that)

Preheat the oven to 200 degrees C. Line a tray with 8 large or 12 small muffins cases.

Beat the eggs, sugar and brown sugar fluffy. Mix flour, vanilla, baking powder, bicarbonate, salt and the spices and gently blend them into the batter together with the oil. Add vinegar to the milk and mix it into the batter.

Fill the cases to 2/3 with batter. Top with chopped pear and chopped chocolate. You don’t need to mix, the chocolate and pear will sink in while baking. Bake for about 15-20 minutes (longer time for large muffins, and shorter for small) in the middle of the oven. Check with a toothpick to be sure they are ready. Enjoy!

Variation ideas for this fika

Choose any chocolate you like! I would recommend white toblerone or lindt white if you like white chocolate. If you want dark chocolate, try something with nuts!
