I have been making so much caramel this December, especially my chocolate caramel with raspberry powder. This is my first rocky road for this year, but I should have made these earlier! So easy! Just chop your favourite candies and mix with melted chocolate. My son is allergic to few nuts, and I am allergic to peanuts. So I make a nutfree base and add nuts on the top. Pistachios for me, peanuts for my husband and no nuts for my kids. The nuts add the crisp to rocky road, So I add “kinasnacks” to the base. Kinasnacks are puffed wheat covered in chocolate.

I save the raspberried as topping because if the colour, together with some of the marshmallows and candies.

Recipe for my rocky road you can make with or without nuts

INGREDIENTS:
  • 150 g milk chocolate
  • 150 g dark chocolate (I use 70%)
  • 6 large marshmallows (approx. 1.5 dl), cut in small peaces or equal amount small.
  • 200 g dumle, cut in half
  • 1.5 dl kinasnacks
TOPPING:
  • 2 tbsp freeze-dried raspberries
  • 1 dl nuts (optional)
  • Extra marshmallows or candies for decoratio

Prepare a pan 15×20 cm (approx.) with parchment paper. Cut the marshmallows and dumle and put them into a bowl. Add kinasnacks. Melt the chocolate and add to the bowl. Mix with a spatula and fill your prepared parchment paper. Top with raspberries and optional nuts/candies. Let chill for at least 2 hours. Cut with a sharp knife and enjoy!
