I am a big fan of banana breads, but I wanted to make something faster and something easier to carry outdoors. So these banana muffins perfect are perfect for that! Super moist muffins with dark chocolate chunks. I used 66% Valrhona chocolate but you can of course use any chocolate you want. I used 50g because I love the banana flavour, but if you are more a chocolate lover, you can increase the amount.

Recipe for the best banana muffins with chocolate chunks (bananmuffins med choklad)
- 115 g salted butter, room temperature
- 2.25 dl sugar
- 2 eggs
- 4 ripe bananas
- 3.5 dl flour
- 1 tsp baking powder
- 0.5 tsp salt
- 1 pinch of cinnamon, ground
- 1 pinch of vanilla powder
- 50 g chocolate (or more), chopped
Preheat the oven to 180 degrees C. Line a muffins tray (or tray) with 9-10 muffins cases.
Mix butter and sugar. Add eggs and stir until smooth. Crush three bananas with a fork and cut the fourth into slices. Add to the batter and mix gently.
Blend the dry ingredients and the chopped chocolate separately and then whisk into the batter. Save some chocolate for topping if you like. Don’t overmix.
Pour the batter into the prepared muffins cases. Top with some chopped chocoalte if you have some left. Bake for around 25-30 minutes, and check with a toothpick if they are ready.
I love to eat them warm but store in the fridge if you have some left. I prefer to reheat them in the microwave oven before eating, but my husband likes them cold. Try and see how you like them best!
