There are different kinds of apple pies to choose between, but I will go for the apple pie with chewy oat crunch topping (knäckig äppelpaj) every time! This is the best recipe for making a chewy but crunchy oat topping on a delicious and flavourful apple base. The apples can be seasoned with your favourite spices, but I chose cinnamon and cardamom. You can skip the cardamom if you want, but I think it gives depth to the cinnamon flavour. If your apples are not too sweet you can skip the lemon, but I only had red sweet apples at home, and lemon is a pie saver then.
My husbands sister gave me the recipe after I tried this pie at her place a few weeks ago. She was inspired by this recipe, but changed a few things. I am sure you will love the recipe as much as I did!
Serve with a nice scoop of vanilla ice cream or with vanilla sauce.

Recipe for the best apple pie with crunchy oat topping (knäckig äppelpaj)
- 6 apples
- 0.5 lemon, juice (optional)
- 0.5 dl sugar
- 1 tbsp cinnamon, ground
- 0.5 tsp cardamom, ground
- 1 tbsp potato starch
- 175 g salted butter, melted
- 2 dl sugar
- 0.5 tsp salt
- 3 dl oats
- 1.5 dl flour
- 0.5 dl light syrup
- 1 tsp baking powder
- 1 pinch of vanilla powder
Preheat the oven to 175 degrees C.
Peel and slice the apples and mix with the lemon juice if the apples are sweet. Cover the bottom of a pie pan with the apples. Mix the sugar with cinnamon, cardamon, potato starch and cover the apples slices with the mixture. Mix with your fingers until evenly distributed.
Melt the butter in a saucepan. Pour in rest of the ingredients and mix everything. Take the saucepan off the heat and click the batter over the apple slices. Make a layer that covers the apples.
Bake in the middle of the oven for about 35 minutes or until the pie is golden brown.
Let the pie cool a bit so the topping have time to become crunchy. Enjoy with vanilla ice cream or vanilla sauce!
Make with different types of apples, and try with different spices. The topping is perfect, so I don’t recommend you changing it haha.
