Started cooking Christmas candy and sweets yet? Try these vanilla and sea salt soft caramels (mjuk kola med vanilj och havssalt) and you will cook them all the time. It’s the easiest sweets you can make, and the flavours are so simple but delicious! Cut in desired shape and size, wrap in a nice paper, and give to your loved one on Christmas (or whenever you want to surprise them).

Recipe for super easy Christmas candy! Vanilla and sea salt caramels (mjuk kola med vanilj och havssalt)

INGREDIENTS:
  • 50 g salted butter
  • 3 dl sugar
  • 3 dl whipping cream
  • 1.5 dl light syrup
  • 0.5 tsp sea salt
  • 0.5 tsp vanilla powder
  • More sea salt for garnish (optional)

Prepare a small square pan by lining it with parchment paper. A bigger one will give you thinner caramels, and a smaller will give you thicker. I use around 20×20 cm.

Add butter, sugar, cream, syrup, vanilla and salt in a saucepan and let it boil until it reaches 124-125 degrees C. The hotter it gets, the harder the caramel gets after reaching room temperature. I love soft caramels, so this temperature is perfect for me.

Stir it now and then. When it reaches desired temperature, remove the saucepan from the heat and fill the prepared parchment paper. Top with some sea salt if you prefer that. Let it cool in room temperature for some hours, and cut into desired shape. I usually can’t wait for that so I start eating as soon as I can cut in it (maybe one hour). Enjoy!
