The light brown sugar gives the muffins a hint of caramel, and the oil keeps the muffins moist even if you store them in the fridge. If you are going to eat them right away and are not going to put them in the fridge, you can change the oil for 100 grams of butter (I baked with both butter and oil today and the muffins with oil were more moist after refrigerating). The vinegar activates the bicarbonate and gives the muffins the perfect fluffiness.
Most of the time I buy mixed gingerbread spice, but if you dont have that at home, you can mix 1 tsp cinnamon, 1 tsp ginger, 0.75 tsp clove and 0.75 tsp cardamom.

Recipe for the best gingerbread muffins with lime frosting (pepparkaksmuffins med limefrosting)
- 2 eggs
- 1.25 dl sugar
- 1 dl light brown sugar (ljus muscovado)
- 3.25 dl flour
- 1 tbsp gingerbread spice
- 1 tsp baking powder
- 0.5 tsp bicarbonate
- 0.5 tsp salt
- 1 pinch of vanilla powder
- 1 dl oil (I use canola)
- 1 dl milk
- 0.5 tbsp white vine vinegar
- 90 g salted butter
- 6 dl icing sugar
- 150 g cream cheese
- 1 pinch of vanilla powder
- 1.5-2 limes, zest
Gingerbread muffins:
Preheat the oven to 200 degrees C. Line a tray with 12 muffins cases.
Beat the eggs, sugar and brown sugar fluffy. Mix flour, vanilla, baking powder, bicarbonate, salt and the spices and gently blend them into the batter together with the oil. Add vinegar to the milk and mix it into the batter.
Fill the cases to 2/3 and bake for about 15 minutes in the middle of the oven. Check with a toothpick to be sure they are ready. Let cool.
Lime frosting:
Whisk the butter white and fluffy together with half of the sugar. Add rest of the ingredients and mix together. Add more or less sugar to get it as sweet and thick you want. Add more or less lime zest depending on the taste.
Pipe the frosting on top of the muffins and garnish with some nice sprinkles. I used Funcakes Joyfull medley.
Add half a spoon extra spice if you really like intense gingerbread flavour. Change the frosting flavour for your favourite frosting that goes well with gingerbread.
