Want to try some new look on your caramel? I made this lovely raspberry caramel and got the idea to give it a romantic touch. Do you have any patterned rolling pins at home? Try to use it to make a pattern on your caramel! There are several rolling pins available with Christmas patterns like snowflakes and hearts. I hade this one with hearts, and it’s perfect if you are celebrating your Christmas with someone special.

Try my raspberry caramel or use this idea on any caramel. I suggest that you make the caramel a bit harder to be able to make patterns on it. I cooked mine to 127 degrees.

Recipe for romantic Christmas candy! Raspberry caramel with romantic pattern

INGREDIENTS:
  • 50 g salted butter
  • 3 dl sugar
  • 3 dl whipping cream
  • 3 dl raspberries (I used frozen, but you can use fresh too)
  • 1.5 dl light syrup
  • 0.5 tsp sea salt

Prepare a small square pan by lining it with parchment paper. A bigger one will give you thinner caramels, and a smaller will give you thicker. I use around 20×20 cm.

Thaw the raspberries if you are using frozen. Press them thru a sieve to a saucepan,  so you get the seeds removed, Add butter, sugar, cream, syrup and salt to the saucepan and let it boil until it reaches 127 degrees C. The hotter it gets, the harder the caramel gets after reaching room temperature. 127 degrees is perfect if you want to press the pattern on it, but I prefer 125 degrees when not making a pattern.

Stir it now and then. When it reaches desired temperature, remove the saucepan from the heat and fill the prepared parchment paper. Let it cool in room temperature for some hours. Roll the rolling pin on the top, and cut into desired shape. Enjoy the most beautiful caramel ever!
