If you have been visiting this site before, you know that I love bananas in desserts. I have several banana recipes, and this is the latest. Banoffee chocolate mud cake (banoffee kladdkaka)! The perfect combination of a classic banoffee pie and a fudgy chocolate mud cake. I am writing that the cake is for 8 persons, but it can easily be eaten up by 2 persons haha. On half on the cake I tried to top with some chopped Digestive for the crunch. Give it a try if you want a salty and crispy addition.

Recipe for best banoffee chocolate mud cake (banoffee kladdkaka)

MUDCAKE:
  • 100 g salted butter, melted
  • 2 eggs
  • 2.5 dl sugar
  • 1 dl flour
  • 4-5 tbsp cocoa powder
  • 2 tsp vanilla sugar or 1 pinch of vanilla powder
  • 0.5 tsp salt
TOPPING:
  • 0.5-1 can dulce de leche (á 397g, I used 0.75 can)
  • 1-2 bananas (depending on size), sliced
  • 2 dl whipping cream
  • Dark chocolate, chopped (optional)

Preheat the oven to 175 degrees C and grease a baking tin (I use this one)

Mix the eggs and sugar lightly. Sift the dry ingredients into the batter, add the melted butter, and gently mix it together into a smooth batter. Overmixing the batter will cause a fluffy and dry cake, so be careful.

Pour into the tin and bake for 18-20 minutes. 18 minutes will give you a more muddy cake, and 20 minutes less muddy. I like to have 20 minutes if I am eating the same day, and 19 minutes if I am eating the next day. Let chill. Keep in fridge until half an hour before eating.

Just before serving, spread the dulce de leche on top of the cake. Top with sliced banana and whipped cream. Sprinkle some chocolate on top if you want. You can see a video of how I make mine on Instagram here. Enjoy!

Variation ideas for this fika

Try to add chopped Digestive on the top instead of chopped chocolate.
